Hey Guys!!Today's blog is a Quickie but a goodie!I will be talking about Healthy Side Dishes. Sometimes we get to excited of what we are going to eat, meaning our main dish. But we always forget about the side dishes for dinner. They are important too. Some of us cook rice or potato and call it a day. They deserve that spice and time too you know. I love side dishes. I feel like they make the plate a bit more interesting if you ask me. For the next two days I will focus on side dishes BUT not only side dishes BUT HEALTHY SIDE DISHES!

I know is about that time of the year where we are all are watching our weight. I am one of them. Alright so today's recipe is so fast but yummy and fulfilling. You want to take your pot and add some cold water and put that heat on high. Make sure to add the lid to it so it can heat up a bit faster. As your water is heating up midway, as you see the steam on the lid; add your salt. By this time your potatoes want to be completely washed through. Make sure to wash your sweet potatoes very good. I can not stress it enough, you want to scrub your potatoes and take all that gunk out.

Now that your potatoes are clean, make sure to cut out both of the ends and make an incision from top to bottom but not to deep. You do not want to cut your sweet potato in half, you still want it as a whole. This will help the potato boil fast and later on when we need to smash it, it will be nice and easy. Add your potatoes to your boiling water and let them do there magic. I like to cook them for 30 to 45 mins, so they can be super soft and so they can also embrace the salt in the boiling water. Okay Babes you are done! Add your sweet potato to your plate give it one smash only. It is going to be so soft and hot, so be careful. Add that Shredded Mozzarella Cheese; the heat will melt the cheese and you are ready to eat! These two flavor are sweet and salt in your mouth. Trust me it does not only look good but it taste great!
